Cajun Orange Pork Chops by Patricia Harmon, Pennsylvania
½ cup of orange juice
2 green onions, chopped
2 TBSP of orange marmalade
2 garlic cloves, minced
1 tsp. of Cajun seasoning
4 boneless, center cut boneless pork loin chops,
In a small bowl, combine the first 5 ingredients. Pour 1/3 cup of marinade in a resealable plastic bag, add the pork. Seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate the remaining marinade for sauce.
In a small saucepan, bring reserved marinade to boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until thickened. Keep warm.
Coat grill rack with cooking spray before starting grill. Drain pork chops and discard marinade. Grill chops over medium heat for 3-5 minutes on each side, until a meat thermometer reads 145 degrees. Brush with sauce and serve.
